Being the last one to leave... staying till 4... turned out to be perfect timing for me.
Drove to work today to drop off lots of cakes and goodies. And receive in return.
And on the way home, made it to the fish markets around 4:20. Timing was perfect. Not too crowded. Still plenty of seafood to choose from so I got sashimi, oysters and oawns. Got wagyu beef that I needed and even picked up a couple of bunches of beautiful flowers. And didn't even have to pay for parking!
It's beginning to look a lot like Christmas!

It helps when the boss' boss brings in a couple of bottles of Krug the night before. Delish. If you haven't tried it, go get yourself a bottle... or two.

How did that happen?
I think I've gone slightly delirious. Working till midnight, working, working, baking, working and baking at the same time. I have no idea how the time has passed in the last fortnight except to say that I am so so tired. Finally, after 14 days of blue, I can see some reprieve in sight!
The decision to only schedule "must dos" these last few weeks has paid dividends. I'm not sure if i would still be alive and coherent otherwise. Lucky for me, Friday we managed to get out at a decent hour - 7:30 - and i got home and crashed and slept for 10. Plus another 3 hour nap on Sat arvo. Recharged now... and only three days to go and 5 mil to close. WE ARE GOING TO GET THERE. Can't quite lift the pedal on the accelerator just yet.
Two more baking orders to go and we're shutting up shop for the year.
A couple more intimate gatherings to attend.

Ahh... and here we were worried that we wouldn't make it onto the boat (by boat, i mean a massive ship that was subbed the "Starship Enterprise" for the rest of the night) on Wednesday evening for our work Christmas Party. I was so excited not only did we get to leave on time (4 p.m. is when the coaches departed our office) but we had an ABSOLUTE BLAST. Seeing the storm on the water was amazing although it did dampen much of the three level ship. It was a shame that we couldn't spend some more time with one of the two live bands on the rooftop level because it was stunning. We spent probably about a half hour up there after grabbing some toilet paper to wipe down the wet seats. That's when I managed to get this lovely night time shot of the bridge.
And so we spent much of the rest (if not most) of the evening mingling with the sales people and everyone else. One of the AEs were clearly trying to suck up by taking this awesome photo of my colleagues and I ;)
Yes we did have a pretty well organised after-party at Bungalow 8 where the real hard stuff (GnTs) came out. Surprisingly I managed to stick around until midnight and by that time, my feet were dead tired and my voice was so raspy that I definitely needed to go home and get some shut eye if I had any hope of functioning normally the next day.
I think I did alright. At least I did not have bloodshot eyes or embarrassed myself hahaha. Unlike some who partied ALL night. No one on Level 9 i don't think... good start!
And of course, I had my friends over for some christmas dinner last night. Doing it all yourself is actually really tiring so I think I would love to do what Velda & Nob did this year (and where I went to today) where everyone brings something. I was in charge of dessert of course so it was pavlova with mixed berries and one of the gingerbread houses which was DEMOLISHED but sooo good. I think half the fun is taking it apart! Winner!!! There was so much food and I didn't think we would finish it all but we did pretty good. Tons of sashimi, prawns, beef, chicken wings, skewers, steaks, salads, fruit and nibbles... and cider, beer and wine (duh!!). I didn't see it in them since some of them are such tiny things but I reckon that outeat yesterday's crowd by miles. Yes, there were a few more guys but still!!!
I literally had to take a powernap after the late lunch. I think we had 22 Jump St on which was pretty hilarious. So it was a very relaxing afternoon. A few rounds of taboo and some game that Velda made up. A few youtube videos (Victoria's Secret Fashion Show) and all around an easy day. Ate more of the leftovers for dinner and feeling so good. Oscar and Mac (the dogs) snoozed and played with us. They are soooo well behaved. Wish Maxxie or Nessie were as good and sociable. Would totally have bought them.
And the drive home was a breeze... it makes me want to drive to work. One day...
It's beginning to feel a little like the festive season... with shopping centres going crazy included! Who knew grabbing just a few grocery essentials could take more 1.5 hours!

Some salad, potatoes, baked cauliflower and small portions or lamb, turkey and ham. It was really good. And did pav again so everyone could partake in the sweetness.
Every year, I am thankful for these bunch of people. They make me smile, they appreciate me for who I am, they have a wicked sense of humour (jelly bean or jelly beans?) and there's no pressure doing the things that we want to do. So thank you again from the bottom of my heart... :)
I think Donna had a great afternoon putting together her very own Gingerbread House. It looked pretty good too! If only I had that much time per house too, mine would look just as great ;) But I am really impressed with this chicky for trying and succeeding and helping me out today with all the little jobs that I didn't want to do. Like peel potatoes and dice mangoes. Thank you!!!
I'm also glad that I will be going to a christmas party tomorrow and all i have to bring is dessert. I know that it will be another relaxing day. I might even be able to catch up on a few winks of sleep. Here's hoping because I know the next 7 days will make or break me. Both at work and out of it. Caught up with Catherine for a foodie catch up sans alcohol. So PROUD!!!
We were to the Rook for lobster rolls, lettuce cups and lobster salad. I was so pleased with my choice of salad... baby beets, sprouts, purple carrots, mini egg in toast topping and succulent lobster pieces made a substantial salad. I think it was one of the healthier choices on the menu and the chardonnay vinaigrette dressing was just right. Very impressed.
We umm'd and ah'd over dessert and decided to forgo the fried mars bar aka heart attach on a plate for some more sensible gelato. Decided to go to the Cow and Moon in Enmore. Limited range of flavours but the roasted coconut was almost as good as the one in Italy. Almost, but not quite there. The passionfruit creme was a bit ordinary. I think i prefer Messina and their wide range of choices!
Think we also bumped into a girl from school but weren't 100% sure... awks. Lol.

So I am mentally preparing myself for it. Clearing my calendar and only organising must-sees and must-dos... please don't be offended if you don't make the list.

Despite all my grumblings about
certain aspects of the people that I work with, I am in many ways very
fortunate to work for a company that every now and then takes us out for lunch
to celebrate a huge quarter 3. We went to Bondi Icebergs. N i c e ! Too many
white wines followed by too many cocktail meant drinking from 1 till 7. Ohh my
stomach and liver. And did I mention there was a total of 16 dishes on the
lunch menu? So sad to see so much food go to waste. Would have been
amazinnnnnnng leftovers. Had to work really hard in the morning to clear my
inbox to make sure that there wasn’t anything urgent left outstanding but
managed to do it.
I probably can’t write this without coming across as a
little selfish and uncaring.
My cousin who has recently completed the HSC returned home
last night for a few months. And boy, was I excited about that. Not that I talk
to him or interact with him or even have anything much to do with him but it
means less weight on my mum’s shoulders. And more time for my family, just the
4 of us and the two furry mutts. And it started perfectly with Sunday lunch –
we all sat down and make salad and sandwiches and then sat around the TV
afterwards. The change in food and being able to eat more salad and raw food
and non-Asian food is amazing. (You could argue that I could have this anytime,
but you have to remember that I’m spoilt and my mum cooks… so we just eat
whatever she makes most of the time. And it is really hard to cater for 2 or 3
different tastes so she usually makes something that my cousin will eat and we
will too… but just not our preference. That is, lots of pork and chicken. Boring.)
I had a quiet weekend, thankfully. Apparently it was really
hot… so everyone keeps saying. Yeah, I was in Sydney but for some reason, I didn’t
think it was melting hot!!! Not sure
why! I mean, it was hot when I had to move one of the cars out of the sun and back
into the garage. And I did stay indoors most of the day but usually our first
floor gets really hot and my room and actually bearable (without aircon) and I didn’t
feel too warm and even the dogs didn’t want to come inside for too long. I even
managed to make some chocolate chip cookies without them melting all over the
place.
Cutest thing last night. Godbrothers (yes, plural!) came to
visit. Both needed my help.. ngaw. Anyways, think Leonard is in like. Hahah,
but its really sweet and cute that he confides in me (more than his mum!). I full
know her name and stuff now… didn’t even take very long to get it out of him! He’s
like, I’ll bring her over for dinner. HAHAHA. Sometimes, its really good to
have people like these munchkins in your life. Because they bring me back to
reality somewhat and make me realise that some things have more merit than
others. That imaginery list that I have – the one where Mr Right has to tick
all the boxes? He just made me rethink a few things… oh then he said I was really
old. :O
It was rather weird to be the only person who wasn't a parent or High School Student friend at the party but it was lots of fun nonetheless. And being introduced to all his high school friends was funny. There were three Helens. All from St George. What the? Oh girls, seemingly so shy around the boys. It's a bit like when you are given all this advice and wisdom that you don't understand at the time. And suddenly, as you get older, these things click into place... hard to describe. But it felt a bit like that last night. As in I was the slightly older person, who would have been given all this advice as a teenager only not to understand until I was who I am today. (Deep, I know...)
Basked in the glory I received for the amazing LoL cake. Yes!!! It was a good idea after all. They all seemed to know what it was, etc even though I didn't! Thank you google and pinterest for the images. Hahah! When teenagers act like excited primary school kids again over something so mundane as cake, you know it is a good effort!
I had to take a photo of all the people taking a photo of my cake. These things made the long hours worth it. And of course when people come up to me and ask if I can make their birthday cake. Marketing in its truest form. Free.
I distinctly remember the last time I went to the Garden Buffet at the Star. I was around about the same age as Leonard. I.e., senior high and thinking this was one of the cooler places to hang out. Whole bunch of people who I thought were my friends, I guess they were at the time. Gosh, haven't I changed since then? Good to know that some things don't and these places are still popular with older teens. I guess it makes sense? Where else can you eat copious amounts of food on a limited budget. And I am sure the guys would put a pretty decent effort in getting their money's worth. I know I didn't last night... at all. Just wasn't so appealing to me.
I seem to come across the casino complex quite often lately. Have been by more than a handful of times in the past few months. I am beginning to feel like I know the place backwards. Don't usually think of Harbourside / Pyrmont as a place to usually hang cause it is so far from everything else.
Found it hilarious last night that Ari preferred to sit with the girls that with me. Ha ha ha pimping already. And he gets along with all the other older kids there so it was really nice to see the relationship between older and younger brother. And they were all pretend arm wrestling with him and letting him win. Very cute. Ari looks up to Leonard almost in an idolizing way and he was so excited that it was Leonard's birthday yesterday. I wonder if my sister use to look up to me like that? Perhaps not, given that our age difference isn't so great.
Love love LOVE this photo of the two. I may have always wished for older brothers but I guess having these two younger godbros is just as special. And I am always so touched when they think of me or Wendie when they do something or want to come over or need help. Just like how I was a little surprised when Leonard personally asked for a 'massive cake' for his birthday. (Insert self constructive criticism on cake... Bottom tier needs to be iced better so that the layers of cake are not so obvious under the fondant. Requires thicker layer of ganache). Happy birthday lil bro ;)
There are just some weekends when you do a lot of things,
and then feel that you can do more.
This last weekend was one of them. On Saturday, it was our
typical brunch date in Surry Hills. It doesn’t happen often that I go to the
same café twice within a very close time period but this was just one of those
places where I really wanted something off the menu because I saw someone else
eating it and it looked really good. And it was. French toast with grilled
bananas and maple syrup plus crispy bacon (I actually asked for ‘extra’ crispy
but it was just crispy to me). It was even more worthwhile cause I got a
parking spot literally on the doorstep on the café. Big win. Chatted a couple
of hours away about life, other people, you know that kind of girly gossipy
stuff that we all like to indulge in.
I actually had planned to do a fair bit on Saturday and I think
I did! I made the batches of white chocolate cake for Leonard’s 18th
cake, cooled, sliced, stacked and iced. I made my Christmas jams and burnt my
arm in the process (but I swear by Vaseline, the white petroleum jelly kind –
swelling gone in a few hours). I was so concerned that the raspberry jam didn’t
set as thickly as I like jams to… I guess we’ll see but when I tipped one of
the jars over in the morning, it wasn’t runny so that’s a good sign? And I even
made my Christmas fruit cake. That took ages mainly because I didn’t have very
many of the small cake tins so they had to be done in batches. And the cakes
take 80 mins to cook so… there were a few lots of 80 minutes going on. And I was
baking into the wee hours of Sunday morning. Whoops, perhaps I should have
saved it for another day?
So as you’d expect, it was a bit of a Sunday sleep in and
then it was cake decorating time. Ohhh, I’ve waited so long for this moment.
The kneading fondant bit actually made me gag (I think it was either the smell
of all the sugar or something I ate before) so that was rather unpleasant. But once
I had the cakes iced with fondant and the real fun began… it was awesome. It was
like thinking of so many things to put on it on the spot and random placing of
figurines until they looked good. The cake looked epic and I was really happy
with it. Yay.
I even made the cake pops that someone had asked for so I was
feeling super accomplished and even managed to watch a few episodes of TVB
(OMG, have not done that in… years?) and was in bed by 10. And up at 5:30 and
ran 5k’s.
Think I may be a little high at the moment? Naturally, of
course.
Anyway, I can’t help but notice this because it is kind of a
pet peeve of mine. When people use slang at work. Actually, it isn’t even
slang, it is just inappropriate use of the English language. Words and phrases
like “you’s” and “heaps busy” and “but
however” and “yeah cause…” or in email and commas and other punctuation is used
in incorrect places (yes, I am one of those people who will read something and
pause mentally when I see a comma or full stop)… it makes me wonder if people
still care about the English language or if teachers are teaching children all
the little things that matter (more likely, the child does not bother to learn
the correct use of words and grammar). I remember my primary school teachers
saying “You’s is not a word! Ewes is the plural for female sheep.” And “A comma
is used to separate or group things not just cause you think there needs to be
one after every 5 words”. And finally… writing emails like you were actually
speaking to someone in conversation… big no!!!

Our go to for Apples now grows stone fruits, berries and cherries. So exciting. So with the announcement on fb, we quickly made plans to get there at 10 a.m. on Saturday and we did. Slightly anxious that there were already another dozen cars when we arrived and so the car park was already full (oh no!!! the cherries!!!).
But that's okay... cause everyone was just heading towards the orchards. And we didn't want to seem over-eager so we actually left the step ladder in the car . . . but as soon as we step foot in... Justin went racing back to the car to retrieve it. HAHAHA WE WERE SUCH WINNERS.
Everyone was asking where we got it.. and we were like so smug... "We brought it." All the lil kids were so upset. bahahahahaha. Apart from the snails nesting on a bunch of cherries (lucky i didn't touch them, was Justin), it was super fun and they were juicy and sweet. We picked just under 10 kilos but I like to think we got the really good ones cause they were high up!

I thought it was touted as probably one of the highlights of
Sugar Hit 2014. I was quite thoroughly disappointed by it all. The famed
Vertical Garden by the chefs at Signorelli
Gastronomia did not seem to wow as much as I thought it would and some
aspects of the dessert didn’t quite seem to fit together. Yes, it was visually aesthetic
although the green wafer was probably
more kryptonite than leafy green. I didn’t feel that the chocolate soil added
much depth and the overpowering flowery-perfume taste of the frozen nougat made
it difficult to taste much else. I did like the pistachios encrusted on the
garden wall and the pretty miniscule fresh flowers too. The berry coulis was
tart and cut through the sweetness and I only wish there was more of it. Put it
this way: the Yalumba dessert wine wasn’t very sweet when accompanied by this
dessert. And that’s saying something.
It wasn’t actually the dessert itself that contributed to my
feeling of disappointment. It was the (and this is my opinion only) way it was
all handled. I guess when we booked, we thought we were really lucky to secure
a table for 8 at 7 PM considering that they advertise for a start of 8 PM. I guess
you make the assumption that they are so busy that they have decided to allow
additional bookings an hour earlier. But we arrived at the restaurant right on
time only to be told by the ever-talkative maître
d that the kitchen was running an hour behind schedule with the desserts
and that not all the servings were ready. At this point, a few questions popped
up in my mind. Our party is here, why can’t you serve the ready portions to us
first? And make up the time in the kitchen as your wait for other guests to
arrive? Surely, you can’t be telling me that your 108+ servings of Sugar Hit
and not one was ready? These items are supposed to be scaleable! So… suspicion set in.
Our [“starving”] party was more than happy to go with the
offered table and enjoy some dinner whilst the kitchen frantically worked on
the desserts (supposedly). And of course, this is probably the game that the
restaurant was playing all along. Because I saw another party of 6 do the exact
same thing (another group of 20-somethings catching up it seemed). Pyrmont isn’t
the greatest location and if you wanted to dine elsewhere, it is the Casino or
back in the city. So a gamble that pays off extravagantly for the restaurant. We
all ordered mains, and a couple of us wines. My calzone with ricotta, ham and
mushroom was bland at best. They don’t offer chilli flakes nor is there salt
and pepper for diners on the table. I realise that some restaurants believe that
their meals should be eaten as is but seasoning is completely up to one’s
individual preference so these condiments should be readily available! The service
was mostly crisp and yet again the talkative Italian waiter was funny and
charming if not borderline brazen. If one was cynical, you could see it as an
act to divert you from all their cunning tactics to have you dine with them? ;)
Anyways, we had a long stay [long to me at least!] at the
restaurant and I think one dessert to share between two would have been more
than enough. They could have free poured the complementary wine a little more
as the glasses weren’t quite standard dessert wine servings and since the wine
was sponsored, it seemed a little stingy.
. . I won’t be back.
Saturday was a bit of a haze. It was a hazy day. It was hot.
It was windy. I was tired. Unbelievably so. My day was broken into bits with
the highlight being going to the fish market and spending an about not too much
more to the amount I spent with Val the weekend before but buying so much more.
Like a whole salmon for sashimi. And tuna, kingfish, oysters and prawns. So good.
Had some family friends over for dinners. Yummo, especially with all that
Margaret River wine! Never thought this would happen again but got invited to
an 18th birthday. Reorganised my supplies for Christmas. Even put
the wreath out already. Not long to go now. . .
Sunday was spent with Jan. We haven’t caught up one on one
in a few months so took the opportunity to go see this year’s Sculptures by the
Sea. I was more interested in the Sea and the Housing. Lol. It was a lovely day
though but a little on the breezy side. And parents with their irritable kids
were out full force. Please keep a tow of your spawn, they should keep to the
left, be quiet, not touch the artworks that say ‘please do not touch’ and walk obediently
alongside mumsy or pops. Not 10 metres behind or 3 metres to their right! We ended
up walking all the way to Bronte and back. Hmm, not sure I’d so it again
though. I am not much of an artistic or creative person so did not understand
very many of the pieces (or did not try to anyway). And definitely not a fan of
crowds. On the bus back, helped a group of American tourists find their way
back to their hotel in the CBD. My good deed for the day was done and with that
my weekend was done too. So so tired.
I mentioned last week that there was yet another career decision
I had to make. This one has been the hardest yet because I still have so much
to learn in both roles. And one where I had to give them an answer at the
beginning of this week.
So do I stick with what I know and where I feel safe (i.e. Finance)
or do I take a leap of faith and stay under the umbrella that is Legal? Both
sides want me (which makes it more difficult because there will be people upset
at the end of it all ).
I decided to hedge my bets with Legal. I know I have lots to
learn from so many other parts of the business that I have yet to touch. But I also
had so much left to learn in Commercial Finance and this was what got to me. What
are my career options now? What if I don’t like it at all?
I know that the reporting line in legal is currently more
defined and supportive. There are changes happening in finance that we don’t
know about yet. Who is the new boss? What are they like? What if we don’t get
along? What if they are tyrannical?
At the end of the day, we are a constantly changing company
so what’s not to say that this new module won’t work and that there will be
more changes or perhaps we have a shift back to the current model? Perhaps in
6-12 months, there will be a more senior position suited for me in Finance (oh,
that was the other thing, the Finance role is more junior to what is offered in
Legal)? Who knows, I’ve seemed to make it so far based originally on a 6 month
contract. I think I should look forward to what’s coming but I am still uneasy
and having second thoughts.
Rather unsure me..
This weekend has been one of the most productive, relaxing
and content weekends that I’ve had in the second half of this year so far. Seeing
a little boy smile and appreciate something you did for him through his eyes.
Batting down the hatches and putting in the hard yards to get that Tax Return
done. Taking the time to spend with family and having lunch with grandma. And
even something as mundane as picking up groceries with the parents. Starting on
my Christmas shopping.
But it was Sunday that really made my weekend. She’s back
again! Our Valerie Rose is back!!! And we did so much that it was so
worthwhile. Even I am amazed at how much you can squeeze into a day.
Need to start the day the health way with brunch! The Rustic Pearl which is another hole in
the wall kind of café came highly recommended from a few credible sources (yes,
urbanspoon was one of them but also from real-life people). They are located in
the heart of Surry Hills and a few stones throw away from Messina. The apple
mint tea was very refreshing although a tad on the sweet side for me. The
addition of pomegranate was very clever. Oh and this café is Turkish-inspired
in case you are wondering. The choices
were pretty adequate and we all ended up getting eggs, one way or another.
Royale, Omelette and scrambled and washed down with plenty of coffee for the
caffeine drinkers. I do recommend trying but would I go back anytime soon? No
but only because there are so many other options in Surry Hills and I have
barely scraped the surface.
Next up, we decided to catch some sun at the beach. So it
was a short drive to La Perouse. I like it for the views, the walk across the
rocks and being able to see the aeroplanes. In hindsight, probably not the best
beach beach to go to. Disappointing
to see so much broken glass on the sand (take care!) and I can only imagine why
parents would let their kids run rampant around. However, this was more than
adequate for our needs today… we went for a lovely walk along the rocks and
came across Mr Pelican who was lapping it up from all his human admirers. We
saw divers, fishermen, a couple of fancy boats and went for a walk along the
beach. The water was still pretty cool but it didn’t stop us from spending a
couple of hours here. Thank goodness today was lucky parking day and there were
no difficulties at any occasion to find a parking spot.
To satisfy our dear Val’s craving for all things seafood,
the now very touristy and commercial Sydney Fish Markets were next up. The highlight
of the trip here was that a car from behind me almost clipped me as he tried to
overtake me to get onto the Anzac Bridge. So not cool dude. What is wrong with
doing the right thing and following me. The light was red hence why I was going
slow. Anyways, the markets were still pretty packed at 3:30 but we still
managed to shop up a lot. Clearly, we ate with our eyes and before we knew it
we had: prawns, salmon and kingfish sashimi, a Moreton bag bug and lots and
lots of oysters. And a bottle of Sav Blanc. Can’t forget the wine. And it was
most important to keep the wine cold over the seafood. Lol. Rather than sitting
around the packed verandah outside, we decided to go to the Botanic Gardens and
have a mini picnic instead.
Such a winner. First parking spot right outside the gardens and then being able to enjoy it all with water views. Had a cooler bag for the wine, had ice and had technology. Picture perfect moment. Funny to hear afterwards that Mandy and her friends were having a picnic there too. Too bad we didn’t run into each other.
And not complete Sydney visit these days without a drink at
the Opera Bar. Again, we found a nice seat outside facing the bridge. Some
bubbly. Watched as the cruise ship left port and watched as the world passed
by.
Finally, headed to dinner at Jonga Jip in Eastwood. Lol… my GPS… took us to the other side of
the station which was a bit fail. So we had to drive around. And so we ended up
getting there only just before Donna (who had to go back for the cake pops and
flowers). We were quite full from seafood but still managed an effort in
getting the whopping 10 side dishes, soup and hot pot a good go. We had to
doggy bag for the doggies a lot of the hot pot. And we smelt like Korean BBQ
afterwards. Sunday evenings are a good day to drive from Eastwood back to
Hurstville. Minimal traffic, 25 minute drive. Worthwhile. Not so much on a
Saturday morning or afternoon. Would take more than double the time. People
always ask me would I ever live in the North and I always answer ‘no’. It’s the
same concept for them not wanting to live in the South. Crossing the bridge,
traffic, tolls. I much prefer the Inner West or Eastern Suburbs. One day, one
day. Although where I am (transport
wise) is not so bad at all.
Was so ready for bed by the time I got home at a respectable
hour of 10 p.m. but considering a 10 a.m. start, it was a long day. It did take
a little time to shut down though. Had a good sleep, hope you all did too and
got up for the gym (yay!). It was pretty busy. And I am in need of new swimming
goggles and cap. Must get this soon.

Although Dad & Son who came to pick up Stegosaurus cake today made my day. He was so awed and I felt so humbled and happy to have made his birthday cake and his day. He could not stop blabbing and he wanted to carry the cake to the car. It was absolutely adorable. Kids in all their innocence and childish glee... I hope it never changes.

Downing two bottles before guests arrived (mainly V and I so yeah, we were tipsy and had to take arvo naps before guests arrived). All bubbly today! Then we had cocktails in the evening. I passed as had to drive.
Main: confit chicken and 63 degree slow poached egg. (Egg shown here is fried as this was pregnant lady's plate).
Starter: Chilled Cauliflower Soup. So heard after the fact that the soup actually tastes 100x better warmed up. Hilarious.
Entree: Pork buns. Delish.

Dessert: Black sesame cheesecake, green tea macaron, green tea ice cream and red beans.

I'm so fortunate to have family like mine! We don't agree on a lot of things and don't see eye to eye on even more but we have fun together!
Another location ticked off my list and another wine region of Australia visited! Awesome fun... most of the time. It rained a bit. My nine wests got ruined. I didn't get the car I wanted but the cottage we stayed at was quaint, quiet and we saw a kangaroo, a fox and rabbits and birds.
Drove the 3 hours down and first stop was Busselton, the jetty and fish n chips! Stocking up on groceries and getting use to the locals. Bogans, lots of them...... I shall stop there in fear of going too far. Although... my colleague (who is actually in Perth) described them perfectly. It shall not be repeated here.
Perth itself though? Don't bother, waste of time.
Went to about 10 wineries, some on my list, some random. One brewery (hmm... not really my thing), coffee, berry farm, farmer's markets and olive oil factory. So much to do.. and so impressed by all the things that were catered for kids.
Lots of beautiful beaches and coastlines across the region. And a little strange for us to be heading West to get to the beach.
Some pretty good food too. Amazing little bar, cafe and restaurant in the middle of town. Menu was amazing and food was so fresh.
The back garden of our home away from more. So relaxing.
Lighthouses, helicopters, lots of wineries, vineyards, wine and more beach!
We like to keep right down to the wire! whoop whoop. another quarter well done to ANZ!
And and and... some mega awesome news for our CFO. So happy to be a part of his team and for doing so well! Changes next year but we will be protected. haha so we hope!

It's a bit like exam preparation and exam day. The more work you do towards the lead up, the more research and preparation you do, the more lucky (term used loosely), you will become. Its too late to change deals, change contracts so its all a matter of waiting and watching all your work come together and fall into place, with a little bit of luck from the lucky stars.
Still a fair bit to go. But i see smiles around. Good signs.

How to knead dough when you don't have a kitchenaid? Why, use a food processor of course! Thanks BB from work for the tip! Would never have thought of that on my own!
Making the Momofuku pork buns for the first time. They are a LOT of work. Knead. Rest. Punch down. Cut. Roll. Rest. Shape. Roll. Rest. Steam. Repeat. I can safely say that I am not exaggerating when I say that it takes a good half day. But they turned out very very good. So pleased. And made enough for practice and to serve on the day (they can be frozen for up to 2 months!). And yes, they are supposed to be slightly yellow in colour. This is because of the yeast that you buy...
And dessert! Will have more elements. Black sesame cheesecake, red bean something, green tea macaron and green tea ice cream... all me!! ;)
Anyways, we're working on names for our dishes and think we're going with the 4 seasons. Winter Garden was the only one I could remember! And ha ha ha, the best dish name, "Snap, crackle, pork" was actually something my sister came up with... oh wells, we're using it anyway!
The guys had to leave right on 5 but that was 5 full on hours of a pretty good practice run. And Mac (their frenchie) came over to play to Max and Nessie. The boys actually got into a couple of fights and had to have time outs (not kidding). But they were so exhausted by the end it was so endearing. Good sleeps for both boys (same age, same weight, very different in size!) tonight. Poor Nessie didn't know what to do so she kept to herself!
Then I had a little break to clean up and along came Justin & Carmen for Sunday Baking Class #2. Tonights's dish for her baking competition tomorrow (we're trying to steamroll and take home first place in every comp, we are 1 up so far!): Pear & Fragipane Tart.
Main ingredient? Butter...
Was easy enough albeit a little time consuming. Mmm... shortcrust pastry was flaky. And Tart was a beautiful golden colour. I think she'll do really well.
Needless to say, I am utterly bummed. Been standing on my feet since 9 this morning and I've just come to realise (perhaps moreso now that quarter-end is FAST approaching) that I don't really have much time between now and rusty chef and high tea. Certainly not quite enough for me to want to do what I want to do to ensure everything runs smoothly for those events. Will need to draw up a plan. Perhaps revise menus. Enlist some help.

Wow, not even two years old and I think I need to take it into repairs. Lucky still under warranty... or it bloody better be! Think the gears are stuck.. it better not be the motor.
I got an email from my mastercard provider the other day. They're introducing the new paytag thing which eliminates the use of a credit card. And you get to have the app on your phone and access your account at anytime. Convenience much? Not to mention all the bonuses they are trying to throw at me because I no longer use the card. But it has made my will stronger to cancel my Visa in the new year. Because I don't need it and I shouldn't have to pay a few hundred dollars a year for "platinum membership". My two fee-free cards do just fine. So does the line of credit.
In other news, I tried the relatively new Waitan restaurant in Chinatown yesterday. It was really nice! Really nice for a $10 million fit out... ridiculous much? Who has that kind of money? I was actually expecting it to be really high-end, uptight and downright expensive. It was none of that but sort of feels like Spice Temple but more Chinese, discrete service, above average dishes and a modest price tag. In short, I'd go again. Especially because we only had 3 dishes: the smoked fish, mushrooms and english spinach and seafood hor fun (special order as we didn't want crispy noodles). Perhaps it was a quiet evening and so the standards were higher, but I was quietly impressed by the place and the decor. A far cry from Golden Century next door...
I've also discovered that since starting this fruit, veg and the occasional seafood diet that I find meat to have a really strong flavour. Had a little bit of beef tonight in mum's curry and it was so... beefy. I think i'm beginning to understand when people can't handle the 'smell' of certain meats... and my stomach is not thanking me for it just yet... it is doing just fine with all the iron and red meat! Feeling good!

Decaf Soy Lattes are just not the same. No buzz and an interesting taste. I had the quinoa salad with avocado, spinach and tomato. Pretty tasty for veg.
The girls had like 3 dishes between them... hahaha. No comment. Piggys :P But it did look good. Pancakes, bacon, pork and mushrooms, sourdough, poached eggs...
Arvo.. spent a wee bit of time in the garden with Mum and some time out the front in the garage with dad checking out the newest family car. Its a Hybrid Camry. I think i still love the Honda more. It goes faster. hehehe.
Was supposed to go IKEA but might have to wait till next weekend. There's just nothing like spending some time at home especially because today is Dad's day.
Happy Father Day to the best dad ever - I was actually thinking of all the things that I am incapable (or at least requires so much more effort) of doing without you: fixing the car, building furniture, opening jars, keeping me in line, all the things that I get away with that Wendie would never, critiquing my cakes, making a decent homemade coffee, buying wine, fixing our leaking shower/toilet/taps, getting my butter out for me when I am still at work so i can bake in the evening, building me a computer, fixing my computer, anything electrical related for that matter, making my friends coffee, picking me up from the station, buying a plane ticket..... i think the list is endless.
We may not be the first family but I wouldn't have it any other way. Future hubby out there... you have massive shoes to fill!

Another excuse to spend my day baking. More macarons - most were successful - first batch was a disaster... whoops? And made a tea cake - Blueberry Almond and Orange Syrup. Looks pretty without decorating and so easy. Definitely a good 'what to bring when told not to bring a thing' kind of cake. And no decorating or icing... EASY PEASY!
And made a batch of homemade blackberry jam. Oh my gosh... why did it take me so long to realise that it is so so easy? Christmas baking and cooking, here I come! And it wasn't very sweet and the texture was amazing. So proud of myself.

I had some spare time at work today and my mind drifted. Actually, it was right on about when I was sending the link to my breaducation course to my colleague to recommend her to husband when I was browsing through the links.

For a good few hours, I was serious about applying for a casual position at the cafe. Why not? It would be good experience, it would give me extra cash (to go towards Mr ATO) and it would hopefully teach me a thing or two about running a cafe.

Just because I have a weekend here and there free, I think I can take on another job. Very immature thinking (*scolds oneself*) - especially when I have been there, done that. You know... helping Ari with his homework. I was kind of relieved that it stopped. I got 2 of my weeknights back. Makes a big difference to hang around and sit in front of the TV, laptop, lay in bed and do nothing but think about the what-ifs and the could-haves and look at the stars maybe...
Was even thinking that I had nothing to lose by applying - which I don't. Then I opened up my resume. And well, how the heck am I going to spin it so that I have awesome customer service, can serve customers food and coffee and be an awesome kitchen-hand with a degree, a post-graduate and my last 5 roles having sat at a desk behind a computer. Yeah right. I guess I can always accentuate tarjay?!?! ;)
And happened to stumble upon "Career Opportunities"...
For a good few hours, I was serious about applying for a casual position at the cafe. Why not? It would be good experience, it would give me extra cash (to go towards Mr ATO) and it would hopefully teach me a thing or two about running a cafe.

Just because I have a weekend here and there free, I think I can take on another job. Very immature thinking (*scolds oneself*) - especially when I have been there, done that. You know... helping Ari with his homework. And so, I had a lovely weekend driving around the local.
Satuday, I finally got my breaducation class booked in and I was rather excited to do the afternoon course at Brasserie Bread. And I loved it, lots of fun. But not so many tips and tricks. A well-established, very successful bakery is not going to give you all their secrets just because you paid for a class...
The flour, yeast, oil, water was all pre-measured. We used their proofing rooms and commercial ovens. I don't think you are quite going to get the same result at home... no matter how hard you try and replicate - even with a recipe (which you do get). It will almost always be a little lacking.
But I still had fun kneading and shaping by hand. I was personally thinking that I'd never do it at home because of the time and commitment it takes. Why invest in a kitchenaid if you weren't going to use it?Sure, no worries when you got a spare 3 hours... but not when you are doing a billion other things which usually is the case on the weekend. Nonetheless, I felt that I didn't get much one-on-one attention because I got the grasp of the technique fairly early on. Boo. And okay, I know that our instructor Matt said that its really different when you shape by hand. You can feel the gluten structure, yadda yadda but I think with enough care, you can achieve almost identical results from a machine. Timing and getting it right.
So in this class, we made 2 schiacciata con l'uvas, 2 baguettes and 6 dinner rolls. And we also got a tour of the production facilities (amazing) and made me grin when I saw that they use the same brand of flour that I use. We also got to taste all their breads... the olive and rosemary and the caramelised garlic... yum. I have no ever eaten so much bread in my entire life. We also got to take some pastries and a loaf of sourdough home. Pretty yummy stuff. Must go to this place for allespresso coffee and brunch one weekend!
I was surprisingly pretty wiped but not (cause I was so loaded up on carbs) after this class so I'm really glad I had a quiet night in.
Today was a mixed day. I feel like I achieved a lot and also not much at the same time. I had a few egg whites sitting around. And due to the ginormous failure of last weekend's macaron project. I wanted to ensure that I still had the touch and that I could still do it. I took my time and lots of care and prevision and wholla, most came out looking damn good...! Not looked so good in many attempts. So I think the key is not to overwhelm myself. Quality not quantity.
Around about this time, Donna and Tab came to scavenge. And they were most welcome to take away the culls and the off bits. :P And also some of my bread! They didn't stay long and I didn't want them to because promised Mum we'd go and check out bathroom vanities and showers and what not.
And I've always known that the Punchbowl area had lots of these shops and I have driven past them countless times on the way to visit my grandma but not once did I ever stop to notice. Not until this afternoon when we were walking up and down Canterbury Road and visiting each of these shops. We even stopped by the McDonald's that was my childhood playground (? not entirely correct term) but there wasn't a sense of deja vu. It was too new, too renovated, too done up. Sister and I decided that we want a shower that has a removable shower head as well as the rain shower head on the top.
We also stopped by Bunnings on the way home to have a look at the stuff they had there.
Not so into renovating so didn't really care too much what was on display but one day, in my own home... I would love to spend days exploring and planning.
I'm now working on two new projects. Salted pandan and coconut ice cream from an ice cream maker. Turned out good... a little too salty, not a fan of the neon green and still very soft so requires time overnightin the freezer but not bad for a first attempt.
Second project is green tea ice cream being whipped by hand. It is a fugly green because I did not add more food colouring. But flavour is there. Whipping by hand is a b*tch. Now you probably understand why i always say I am a lazy baker. Anything to cut the time and processes short please... I have been checking the mixture every half hour out of the freezer and whipping it again and again and it is still very soft and not airy enough! I feel like I'm running out of time. Or is it patience?

I can safely say that I was pretty unappreciative of the opportunities and work I was given in my last company. I don't really need to go into all the details but pretty much until Mr I-give-him-so-many-referrals-but-the-favour-isn't-returned came along, it was a pretty dark place. I didn't have a good mentor (in the three that came and went) and the work I was doing wasn't quite enough for my development. Opportunities were lacking to say the least.
And then, it kind of shifted gears and went up a notch. And probably another one because I wanted to learn and asking for more work. And if it wasn't for those last 15 months including the 3 at the very end running Finance by myself that my professional development exploded. So much so that I was taking on so much, it gave him too much free time. But these things don't happen overnight. And the guidance and the mentoring and the help - professionally and personally - over this time has really defined where I am today.
Why am I saying this?
I had a coffee catch-up with Nick this morning. And I was talking about some of the stuff happening at work. And he was telling me about his. And how there's no one left that we would know at said company. That's really bad considering it has only been about 15 months since I left.
Basically, I was comparing myself now to who I was back then and how I now let things slide (a lot of things...) when 2 or 3 years ago I would have gone down kicking and screaming. How I now play the ball, not the person. How to kill them with kindness. I wouldn't have this self-restraint had I not worked with a bunch of wolves before. Trust nobody but yourself.
I think he's doing a bit of the same. A little bit of soul searching... sending those feelers out there... looking for the next step. I'm hearing that a lot these days. People are tired, wanting to move on and the perfect opportunity to look and do so with the new year is just around the corner. I think 2015 will be one of many changes.
Second reason this has come up in my mind. Chris texted me today. I sound surprised. I am surprised. Second week into the new job as an AA and I got the feeling he was desperate and in need of a LOT of help. Working late hours already. He asked me about payroll tax and some journals. I actually responded by saying that his manager should be able to help. He said that his manager didn't know.
And it became clear to me that he doesn't have the right mentor in place to help him in his professional development. And that is a problem. Because you can only be as good as how you've been taught. You help yourself by asking the right questions. But if those questions go by unanswered, or answered incorrectly, then what are you learning? He was asking pretty basic stuff. (And personally, that is why I will never work for a small company again. This is another topic altogether).
And it also makes me wonder, how can there be people out there who are Finance Managers and Financial Controllers who don't know the basics of running a finance department? In the very least, you need to be able to provide guidance on how to achieve something. Self-help is great but as the leader, you should be pointing them in the right direction and steering them back on course when they aren't!!! And hold their hand if they need it (but only briefly)! Because I definitely did not learn everything in one go. Sometimes not even in two or three... Hashing things out is also part of the experience. Who wants to be told how to do EVERYTHING without coming up with a more efficient process or doing something when they disagree with the thought process?
I'm still learning, everyday. And I'd like to think by now, I can see through the BS and be able to decide for myself who I can learn from, who would be a good mentor and where I need more development. I had lunch with two ladies today - both in completely different departments - one in Business Ops and one in Partner Consulting. Both excellent candidates for new mentors, and they extended the invitation to me to ask them anything, anytime. They have more than 30 years experience at my company between them. Something that is invaluable and something I should be using to my advantage. No one is going to care about your career except yourself. You can't wait for opportunities to be presented to you. If the right one comes by, speak up and put your hand up. Because no one else will do it for you.

It was Harry Potter themed because one of the guys in the team was named Harry. And I think he actually did a lot of the cooking. Impressive dishes... lamb (overcooked), chicken (ironically undercooked) and giant prawns for main with salad and potato hash (which was described as looking like "concrete" from a fellow teammate of mine... LOL. Yes, this competition is taken uber-seriously. There is a plaque at the end and this is the 3rd year they have done it!).
And soups, scones, chiffon cake, brownies, jelly, salad, bread, fried cronuts, strawberries and mini M&Ms for entree. Are you confused yet?? The idea behind the theme was to make it look like the Harry Potter movies where the long tables are just flowing with food. It kind of worked but all the sweets things for entree was a little strange!
Dessert was a rendition of Black Star's Watermelon Cake. It wasn't quite right but looked really pretty nonetheless. And the granita was really good. And to think Joyce did it all.. impressive!!! Like a mix between lunch and High Tea is what they called it. I am sooo going to try and make her Earl Grey Chiffon Cake.
I think most of us were more excited about watching the actual movies - we watched the last movie and Goblet of Fire. Ha ha ha... Cedric... Cho....
Then we youtubed bad lipreading and karoke-d Let it Go a few times and some other random stuff. Made for a great, relaxing afternoon. I think we were really noisy though. It was like.. someone would say something and it would get shot down and the volume would just rise and rise and rise until we were shushed again. hehehehe. They are a really crazy bunch.. who would've thought?! Different to my bunch but probably not so different in many aspects. I would say there are more dynamics in play here.
Yawn. I think its past my bedtime...
But let me tell you of the story of a recent Friday afternoon / evening. Where the wine and food flowed. And the wine kept on flowing until around 9 p.m. Yes, for those who are mathematically minded, that is 8 straight hours of drinking. Now, if it was 1 drink per hour, yeah... I would have been fine. No such luck.
It was the widely anticipated Team Thank You for Q2 Lunch that was sponsored by our awesome MD & CFO. Very generous.
And we were chauffeured in a corporate car to one of the old wharfs by Pyrmont to a beautiful restaurant (can you guess which one yet?)... Flying Fish. We had an amazing 3-course lunch and probably about a bottle of wine each in the end. The champagne was flowing, then the whites and then the reds and luckily they served coffee at the end!
I chose Yellowfin Tuna with Pork crackling to start (the sauce was a tad too sweet for me) but the fish was perfect (well, it was raw....)
Followed by a rack of lamb and wilted vegetables and a fried lamb croquette kind of thing. SO YUMMY. But then, everyone else's choices looked really good too!!! This was served with hand cut chip and leaf salad.
And for dessert, it was a Rhubarb Compote with wattle seed and chocolate sorbet, gingerbread dirt and toasted marshmallow. It was sweet and very tart at the same time but the sorbet... BLEW. MY. MIND. I want to re-create it. It was like choc-lately but without the milky texture. But it wasn't sweet. And the wattle seed reminds you of sesame but not as fragrant. But it was so well-balanced. Wow. And about 5 glasses of wine later... we were heading for a very very good afternoon.
So the "non executives" (yeah... they had some excuse of needing to go back to the office...) meaning the rest of the group decided to cab it (we were actually going to be really really classy and get a water taxi until the waiter at the restaurant told us it'd be a 20-25 minute wait for one. We decided that was to long without a drink) to the Opera Bar where we enjoyed the last of the day's sunshine and smashed more 2 more bottles of rose, 1 bottle of red and SHOTS LIKE WE WERE TEENAGERS AGAIN. I didn't even know they still served wet pussys!!! Anyway... I don't know but we ended up with a stash of cash and a collection of borrowed cigarettes (don't worry, I didn't smoke) which became our kitty and pretty much just took turns going up to the bar. . .
All the while, I was actually texting my sister saying it was my last drink and I'll be home for dinner. Nope, didn't make dinner. Wasn't even close.
I think by the 3rd shot, I was pretty sure that there wasn't going to be a "I'll be home soon" ... rather, it was "I'll be home drunk... don't know when. Please leave the porch light on."
GREAT company though. And these drinking sessions are where you find out the real deal behind your colleagues. Who are friends and who aren't. And all the little bits of gossip that is taboo within the confines of the work environment! Who knew that lawyers could drink so much? Or talk so much? Or be so much fun? I don't remember having such an awesome work function in many many years.. would probably need to go back to my GE days to match this!
I think we called it a night around 9-ish. We stopped these tourists and made them take a group photo for us. I'm pretty sure they weren't Japanese but we were yelling random words to then in Japanese. I think they thought we were cray cray.
I vaguely remember us all walking around Circular Quay and making outrageous statements like we owned the place. (One David, Snr Legal Counsel: "I have the title of my property in my pocket. I could easily lose it or double it at the casino right about now.."). Yeah, really really responsible. Saw a flag for Don Giovanni and decided we all wanted to go see it together... A couple of us got cabs and I ended up with a couple of the others at Ho Star Fried Chicken. LOL. The chicken was good but nothing like the chicken in Taipei. Not the same. But we were starving by the time. Something akin to wanted a kebab after a serious drinking sess.
I was in a world of pain by the time I got home. I lay on my bed and it was like a tonne of bricks had crashed down onto my head. This went on for hours. And hours. I barely slept. And when I did, the morning after wasn't so great. I think it went by in a haze.
I somehow managed to get up around 11 to a least try and build and ice a respectable cake for mandy. It barely musters a pass..
And i thank Miss D and Mrs Hoho for coming along to pick me up and driving. It was an interesting party. Korean Variety shows... who would have known. And cooking monja (?). Interesting but I'm not convinced that was how it was supposed to taste! Nevertheless, a quaint little get-together. You get points for trying!
Came home and was itching to make macarons. But alas, most of them failed. I even had them resting for a good period of time. And followed everything to the tee. I think I'm losing my macaron touch. :( More practice required. But such a waste of beautiful ingredients.
Donna stayed and iced her own dome cake. It was really cute! Enjoyed tea and coffee as we planned this year's High Tea. Needing a lot of inspiration this year........!

And i thank Miss D and Mrs Hoho for coming along to pick me up and driving. It was an interesting party. Korean Variety shows... who would have known. And cooking monja (?). Interesting but I'm not convinced that was how it was supposed to taste! Nevertheless, a quaint little get-together. You get points for trying!
Came home and was itching to make macarons. But alas, most of them failed. I even had them resting for a good period of time. And followed everything to the tee. I think I'm losing my macaron touch. :( More practice required. But such a waste of beautiful ingredients.
Donna stayed and iced her own dome cake. It was really cute! Enjoyed tea and coffee as we planned this year's High Tea. Needing a lot of inspiration this year........!
